We’re entering the home stretch of the 2022 Build-Outs of Coffee. The end is in sight, and that means it’s time to kick it into high gear and go all out. With just a few weeks left in our yearly globetrotting series, we still have some wonderful cafes to feature, and today’s entry is certainly one of those.
Theory Coffee Roasters has recently opened their first standalone cafe in Redding, California. This is their second cafe after their cafe/roastery space, just two miles west down Highway 44. With lots of natural light and warm wood textures, the new Theory is modern cafe in the middle of beautiful Redding.

For those who aren’t familiar, will you tell us about your company?
We’re an award-winning coffee roastery serving coffee, tea, kombucha, and specialty drinks paired with Eden Bakery‘s baked goods and pastries. We started as a collaboration between two local coffee roasters and are now a full-scale cafe and roastery where the spirit of collaboration and community is at the heart of everything we do. Open everyday in beautiful Redding, California.
Can you tell us a bit about the new space?
Our newest location is located on the east side of Redding, close to the shopping centers of town. We wanted to create a bright welcoming space that has enough room for people to grab a coffee and work or meet a friend! The space has lots of windows and natural light coming in with a mezzanine up top that has a beautiful view of the mountains near by, showing off some of Redding’s beauty. The space is bright and modern with some natural touches.
What’s your approach to coffee?
Good coffee starts at the farms, we are committed to sourcing amazing coffees from farms that are ethically run and paid fair trade market value. We roast weekly and do weekly cuppings to ensure quality and consistency. Coffee preparation is a creative craft, not a task to be conquered. Becoming an educated and skilled barista takes time, we train each barista on proper coffee preparation and milk steaming. The distinction between developing a craft versus executing a task is paying attention to the details of everything and learning correct technique.
Any machines, coffees, special equipment lined up?
What’s your hopeful target opening date/month?
We opened in August of 2021 but have been finishing up a few projects this year with the projected completion date being end of September 2022.
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
We partnered with a local architecture studio, RAD Studio, as well as a an interior design studio Master and Main. We’ve loved working with both of them!
